Ingredients:

For the Salad

1 cup red cabbage. Thinly sliced
1 cup green cabbage. Thinly sliced
4x spring onions. Finely chopped
1/2 cup steamed green beans, thinly sliced
1 cup rocket. Chopped
1-2T sesame seeds, lightly toasted
1 Avocado coarsely diced or sliced – (optional)

For the Dressing

Juice of one lemon or lime
2-3T olive oil
1T tahini
1T apple cider vinegar
1-2T water, just enough to thin the dressing so it coats the vegetables easily. Do not dilute the flavours
2.5 cm fresh ginger
grated salt and pepper to taste
1/4 cup fresh coriander

Method

  • Place all the vegetables in a salad bowl
  • Mix all the dressing ingredients in a small jar and shake well to emulsify
  • Pour the dressing over the salad and mix well to coat the salad
  • A few slices of avocado can be added.
